Macadamia Coconut Granola will make you feel like you’re somewhere tropical, drinking pina coladas out of pineapples that a young shirtless man brings you and soaking up all the sun instead of 5am alarms and a slow commute to work.

I love granola, but it’s so godamn expensive for a decent one (i’ve seen some going for $16 for 500grams). You know the kind that isn’t just oats and a few pieces of dried fruit and loaded with nasties. So I’ve started to make my own at home, not sure why I didn’t start doing this regularly earlier 🤦🏻♀️.
It’s so so easy, quick, cheap, and you can add whatever you like. Don’t like macadamia nuts (are you okay) replace them with almonds, like dried fruit in your granola? Chuck in some dried pineapple and mango chunks. The sky is the limit my friends. But like, this combo is reallly good so you should try it.

My favourite way to eat this Macadamia Coconut Granola is with some fresh coconut yogurt and mango chia jam . The flavours are just out of this world. Creamy coconut yogurt with tangy mango and crunchy granola. mm mmm mmm, I’m happy dancing just at the sound of that. So refreshing and works perfectly as breakfast or for a snack.
Others way to eat Macadamia Coconut Granola
– with milk, like cereal
– on top of a smoothie bowl
– by the handful, seriously just grab a handful and shove it in your mouth, no ragrets
– topping for crumbles
– sprinkled over cut up fruit with nut butter
– put in a parfait
I could on but I think you’re getting the point, I hope so anyway.

Not that you really need any more reasons other than this granola is life changingly delicious but it also contains a ton of health benefits.
Healthy fats and Omega 3’s from the coconut, coconut oil, and macadamias. Complex carbs from the oatmeal, magnesium and other minerals and nutrients from the pepitas.
If you weren’t convinced before surely you are now.

I just had a genius idea, these don’t happen often so listen up. With mothers day coming up (for me anyway), put this Macadamia Coconut Granola in a cute little mason jar, tie a ribbon around it, write a cute little note and give it to your mummy. If you want to go that extra step further, which you should. This is your mum after all, pack it into a picnic basket with some fresh fruit and yogurt and take your mum on a picnic. Boom amazing gift idea thats filled with love.
I accidentally left my granola in the oven for a little longer then 30 minutes, but I found by burning it a touch added a depth of caramelised flavours to the granola.

Macadamia Coconut Granola is filled with crunchy nuts, coconut and sweetened with maple syrup. Perfect for breakfast eaten with yogurt or as a snack.
- 3 cups oats
- 1 cup coconut flakes
- 80 grams macadamia nuts
- 1/2 cup pepitas
- 1 tbsp chia seeds optional
- 1/2 tsp salt
- 2/3 cup maple syrup
- 1 tbsp vanilla extract
- 3 tbsp coconut oil

Preheat oven to 180°c/350°F.
Add to a mixing bowl oats, coconut flakes, pepitas, chia seeds and salt.
Coarsely chop the macadamia nuts and add them as well. -
In a small mixing bowl, whisk together maple syrup, vanilla extract and oil. Pour the mixture over the oats and nuts and mix well until everything is coated. Spread evenly onto a baking tray.

Bake in the oven for 30 minutes stirring halfway through.
