We all have a love affair with potatoes, there is no denying it. A staple at most dinners, from mashed to fries we gobble (anybody else actually gobble and not just me?) them down. And they taste good, great, yummy but these, these Roasted Lemon Greek Potatoes my friends are AMAZING. Get ready to fall in love all over again like a giddy school girl.

The potatoes are firstly cooked in chicken (or vegetable to make vegan) stock that is heavily flavoured with lemon and garlic – lot’s of it, seriously do not skimp on the garlic. The potatoes soak up all that flavour and become flavoured all the way through and this makes the inside soft and creamy.
After the potatoes are done soaking they are popped back in the oven to become crispy and caramelised on the outside. I’m currently licking my lips as I write this.
I’m not going to lie to you, these aren’t the world’s crunchiest roast potatoes but thats’ because they’ve been soaking up all that lemony garlic flavour. Instead, the outsides become crispy like you can see in the photos and the inside is soft. In all honesty, the flavour is worth the sacrifice.
How should you eat these potatoes?
My absolute favourite way to eat these greek potatoes is a plateful of potatoes and a bowl of Almond Mint Pesto for dipping purposes. Eaten just like you would a bag of chips and dip. This is my version of that.
Just like normal roast potatoes, greek potatoes make for a great side to practically any dish. Especially chicken souvlaki and greek salad.
Even better they’re simple enough to make for quick weeknight dinners but they also are that good you can serve them for special occasions and when you want to impress.

Soft and creamy centres, crispy caramelised outside and bursting with lemon garlic flavours. You're about to fall in love with these Greek Potatoes!
- 1 kg potatoes
- 1 cup low salt chicken stock
- 1/4 cup olive oil
- 1/3 cup lemon juice
- 6 cloves garlic
- 1 tbsp oregano
- 1 tbsp mint
- 1 tsp each salt and pepper
Preheat oven to 200°c/390°f
Peel and cut the potatoes into wedges. Add to a roasting tray along with all the other ingredients. Mix everything together then spread into a single layer.
Roast for 45 minutes, turning half way through or until liquid is almost gone.
To make the potatoes crispier, spread the potatoes in a single layer on a separate baking sheet, drizzle over a little juice and then roast for a further 20 minutes.
Transfer to a serving plate and serve with lemon wedges
