Gingerbread granola made with a little sugar and a lot of spice, perfect for Christmas morning!
So I’m just like every other basic bitch out there who just loves the holiday season, excepts I’ve never had and probably never will have a pumpkin spice latte. Since its November now it’s time to start getting into the festive spirit, I’m talking all the Christmas carols and all the Christmas cooking.
Wanting to break free and be a little adventurous this season I decided instead of baking gingerbread men I would bake gingerbread granola. To get the same flavour you would with the gingerbread men you use the same spices; cinnamon, ginger and nutmeg to give it warmth. Golden syrup and molasses add that little touch of sweetness. Mixed with some nuts and oats and it’s really that simple! I’m not a dried fruit fan but If you are then throw in a few dried cranberries. Granola is one of those recipes where you can mix and match.
Serve Christmas morning with some yogurt and fruit or even some warmed milk which would really awaken those spices.
This gingerbread granola also doubles a really inexpensive and thoughtful gift. Just add to a glass jar and tie a little ribbon around it. I don’t know about you but I would be over the moon to receive this as a present.
I mean look at that crispy crunchy granola!
- 3 cups rolled oats
- 1 cup almonds
- 1 cup walnuts
- 1 cup pecans
- 2 tsp ground ginger
- 2 tsp ground cinnamon
- 1 tsp mixed spice
- 1 tsp nutmeg
- 1/2 tsp sea salt
- 1/3 cup coconut oil
- 1/3 cup golden syrup
- 1 tsp vanilla paste
- 2 tbsp molasses
- 2 egg whites, whisked until frothy
Preheat the oven to 140°c and line a large baking tray with baking paper
In a bowl combine oats, nuts, spices and sea salt. In a separate bowl combine golden syrup, coconut oil, vanilla paste and molasses. Pour the wet ingredients into the dry and mix until everything is well combined.
Mix through the egg whites and spread onto the baking tray. Make a hole in the centre, this stops the edges burning before the centre is crispy and golden.
Bake for 45 minutes or until golden without stirring!
Turn off the oven and open the oven door slightly, leave the granola to cool. Once cool remove and break into clumps.
