Healthy Banana and Strawberry Muffins

Are you ready to have your mind blown!?!? These Banana and Strawberry Muffins are healthy!! Yes, you read that right, and even better they only take 5 minutes to throw together. You’ll be eating warm cinnamony muffins in no time! I may be a little hyped because I had an excellent workout this morning and an even better breakfast! (I may or may not have eaten almost all of these Banana and Strawberry Muffins for breakfast). Also, I might need to ease up a lil’ on the !!

I hate spotty bananas, even the smell of them makes me gag. If, by the off chance I’ve brought bananas and forget about them and they’ve started to turn spotty I’ll leave them to live another week growing old and decrepit before I turn them into something even more delicious than an oatmeal topper. Some of my favourite dishes to make are smoothie bowls, banana bread (duh), pancakes and of course these Banana and Strawberry Muffins.

I want to reiterate how damn easy (and tasty if I do say so myself) these Banana and Strawberry Muffins are to make. Take all of your ingredients excepts for the strawberries if you want them chunky, chuck them into a blender and blend until smooth. Mix through the strawberries, scoop the mixture into muffin tins and bake. Legit that simple, oh and did I mention they’re healthy already!?

Drizzle the muffins in a little honey whilst they are still fresh out of the oven and you’ll think you’ve died and gone to heaven. They are perfect for breakfast, a snack or even dessert.

Feel free to mix and match the fruit and add-ins for example swap the strawberries for blueberries, add some flaked almonds and a little lemon zest. How good does that sound!? Maybe I’ll have to make that combo next week. Ciao, for now, I’m off to eat a few more muffins ;P

These Banana and Strawberry Muffins are the healthy and more delicious version of your childhood favourite PB & J.

Ingredients
  • 2 cups oats
  • 2 bananas
  • 1/2 cup nut butter (peanut butter works really well)
  • 2 eggs
  • 2 tsp baking powder
  • 1 tsp cinnamon
  • pinch of salt
  • 1/3 cup honey
  • 1/2 cup almond milk
  • 1/2 cup strawberries, diced
Instructions
  1. Preheat oven to 180°c and grease a muffin tin. 

  2. To a food processor/blender add the oats, bananas, nut butter, eggs, baking powder, cinnamon, salt, honey and milk. Blitz until smooth.  Mix through the strawberries, saving some for the top. 

  3. Evenly spoon the mixture into greased muffin tin. Bake for 20 minutes

    I have tried them and they are beautifully we couldn’t stop eating them I had to make an other batch. Thanks for sharing.
