The bright fluro colour of this hummus is 100% natural and comes from roasted beetroots. Adding beetroot is a delicious twist on traditional hummus and adds a subtle sweet flavour. Even if you’re a beet hater you will love this beetroot hummus because the flavour isn’t beet-y at all and instead mixes with the cumin, lemon and garlic to become one unforgettable bite.

All that stands between you and this vibrant beet hummus is 8 ingredients (you will have most at home already like salt and pepper) and a couple of minutes! This has to be one of the quickest and easiest recipes on earth, chuck everything into the blender and blitz until creamy and smooth.
Okay, maybe not the quickest if you decided to go down the route of roasting your own beets. Roasting beetroot can take anywhere between 1-2 hours. So if you’re like me and need a beetroot hummus fix on the asap you’ve got 2 options.

My favourite ways to enjoy this hummus is on toast with some poached eggs for breakfast, with veggie sticks for dipping as an afternoon snack or on a falafel wrap for dinner. But look honestly I’m not going to judge you for eating it straight from a spoon, i’ve been there.

Fluro coloured Beetroot Hummus made with simple ingredients. Creamy, vegan dairy and gluten free! Enjoy with pita, veggie sticks or in wraps.
- 2 medium cooked beetroots
- 1 can chickpeas drained and rinsed
- 1 lemon, zest and juice
- 2 cloves garlic minced
- 1 tsp ground cumin
- 1/2 tsp smoked paprika
- salt and pepper
- 2 tbsp olive oil

Quarter the beetroots and add to food processor along with all the other ingredients except for the olive oil. Blitz until smooth. With the motor running slowly add the oil through the feed tube until well combined and smooth. -
Serve with pita bread, crudités, or on a falafel wrap.
Hummus will last in the fridge up to a week, I do not recommend freezing.
